Fill your freezer with Heritage Breed Berkshire Pork cut just the way that you want. 

The hogs that we offer for sale as half and whole animals are raised by Mangalitsa Estates in Clearfield, Iowa. They have beautiful intermuscular fat, a distinctive dark color and are definitely NOT "the other white meat"! We have so many repeat customers on our pork chops who tell us that it tastes the way that they remember pork used to when they were kids. 

 

Processing on a Half or a Whole hog will be unique to you and your families needs. We can make any of our bratwurst or bacon flavors or leave things as simple as unseasoned ground pork depending on what you usually buy and cook. There is no set way that we cut a half or whole hog; we will work directly with you either in person or over the phone to get your cutting instruction and make sure that we process your order in the way that is most useful for you and your family. 

 

Because hog processing varies a great deal based on what products you would like, the following example bill is just a ball park of what a half of a hog usually costs. 

 

A half hog weighs between 120-140 lbs on the rail (on the rail is butcher speak for: the weight of the animal after it is harvested with all of the bones, fat, and edible organs attached. This is the weight that the farmer gets paid for.). The farmer chargers $1.25/lb and we charge $0.95/lb for processing. 

 

On top of those charges are additional costs associated with the options that you choose. For example, if you choose to make smoked bratwurst, that will be more expensive than plain breakfast sausage in 1 pound packs.

1/2 pig ......................................................................120 lbs x $1.25 = $150.00

Processing ...............................................................120 lbs x $0.95 = $114.00 

Bacon cured and sliced...........................................................................$30.10 

Trim into 1# italian sausage ........................................25 lbs x $0.95= $23.75

Trim into bratwurst links, frozen in 1lb packs ............25 lbs x $2.10 = $50.25 

1/2 of slaughter and delivery fee ...........................................................$37.50 

 

TOTAL $405.60

Ballpark take home weight = 85 lbs
